Proper Cleaning
- Ensure the cutting board is free from food debris, dirt, oil, or grease when not in use.
- Use a steel scraper or spatula as necessary throughout the day to keep the surface clean, avoiding steel brushes. Scraping the surface will remove 75% of the liquids.
- Clean the board with a cloth and mild soap, wipe thoroughly, then rinse and wring out the cloth and go over the surface again to remove any remaining soap. Finish by drying all surfaces with a clean towel.
Regular Maintenance
- Boos Block Mystery Oil is a food-grade, NSF certified mineral oil that deeply penetrates and moisturizes wood. Apply an even coat to all cutting board surfaces with a clean cloth or Boos Block applicator at least once a month, especially if the board looks dry. Ensure the board is clean before applying. Let the oil absorb overnight, then wipe off excess and reapply to any dry spots as needed.
- For extra protection, use Boos Block Board Cream alongside the Mystery Oil. This NSF certified cream, made with natural beeswax and food-grade oil, creates a protective wax barrier to help protect against food and liquids. Apply an even coat with a clean cloth, disposable towel, or Boos Block applicator. Let it penetrate overnight, then wipe off any excess.
Tips for Care
- DO NOT leave meats and liquids of any type on the surface for long periods; they can cause the wood to expand, soften, and weaken glued joints.
- DO NOT cut fish or poultry unless the moisture barrier is intact and always clean the surface thoroughly afterward.
- DO NOT use a razor-edged cleaver or serrated knife, as they can chip or splinter the wood and produce soft spots.
- DO NOT use harsh detergents, as they can damage and discolor the surface.
- DO NOT put cutting boards into the dishwasher or wash your kitchen tools on your cutting board surface.
- DO NOT over oil your wood cutting board surface.
- Maintain the original bevel on the edge of your cutting board to prevent splitting or chipping.
- Distribute cutting evenly across the surface; if reversible, flip the board periodically for even wear.
- Repair minor scratches by sanding with fine (#200) sandpaper, always with the grain, and remove all dust.
