Joshua Erdheim: Dunnage racks are racks or units that you place and store boxes or other heavy products on to keep them off the floor. They are low in height, typically only one shelf or level, and they allow for easy cleaning underneath as there is 6” or more between the bottom of the shelf and the ground.
ST: Why do kitchens need dunnage racks?
JE: To maintain proper sanitation, the New York City Department of Health requires that restaurants and other cooking establishments keep their ingredients at least 6 inches above the ground in storage areas. Dunnage racks provide this half-foot buffer, as well as a convenient and durable space for kitchen crews to stockpile bulk ingredients and other supplies.

Mobile
Mobile dunnage racks are ideal if your restaurant or café stores food or other retail items in bulk.
